Hot and Fast

Over 200°C (392°F)

Pizza I cook at around 240°C (464°F), I sear steaks around the same temperature.

Meats cauterise well at these temperatures, so great for searing and flash frying.

While Pizza ovens, Kamados and some BBQs will get over 270°C (518°F) this is screaming hot and there is not much I’d cook at this heat.
