Grilled Sardines

I live in Fremantle, Western Australia.

Fremantle (Freo) is a Fishing and Container Port

Nothing gets me more excited than seeing this sign as I drive home!

Fresh Sardines are a real joy and damn good for you, lots of Omega 3 doodads!  I can’t resist getting a kilo or two!

The first job is to clean them, remove the heads and gut, Scissors work best for this!

This next bit is up to you, if I’m having guests or feeding Management, I remove the spine and rib bones, if it is just me, I’ll leave them in (the extra calcium is good for you).

This is my “Go To” technique, grilling over vine cuttings.

These are cut off the grape vines at the end of the season and burnt in big piles, talk to tour grape grower the grape canes make a great smoking wood!

I light a small charcoal fire and stack the grape canes on top.

Then I put the sardines straight onto the grape canes, using them as a grill!

It can get a bit exciting and theatrical so make sure your beer is full before you start, there is no time to go to the fridge!

A great appetiser and it’ll get people talking about your crazy BBQ Skills!
