These Chicken Taco’s are so easy to make!  Twenty minutes and some simple ingredients will see a great fun family meal appear on the table!

Work out how many you need and add at least one extra per person…Everyone will go for the extra one!

A satisfying Family meal!

Get some good Tortillas, I like this La Banderita one! But the “One Night In” is a good substitute.

I’m using Diced Chicken Thighs, roughly 250g per person.

No measurements but roughly a teaspoon of Smoked Paprika and the same of Chipotle Powder per 500g of chicken

Here I’m cooking for two!

Fry the chicken in batches, you can see I have not worried about getting the chicken totally coated in the spices, it will all work out in the cooking.

Do not cook them completely through, finish when the chicken is still a little pink

Transfer the half cooked fried chicken to a pot, add a small amount of water or chicken stock, I used 100ml of stock.

Gently heat the chicken for a few minutes, it will release more liquid.

Careful not to overcook or the chicken will go rubbery!

Brush each Tortilla with the smallest amount of oil.

Fry then one at a time in a HOT dry pan.

It won’t take long to get some colour on the Tortillas, don’t overcook them or they will turn brittle

A little bubble or separation of the sides is a good sign

As each Tortilla is cooked, place it in a folded tea towel to stay warm and moist.

When all tortillas are cooked, place your tea towel package in a warm oven to keep until service time

Set the table with all the things you will need.

Jalapeno, Avocado, Chopped Corriander or Parsley, Sour Cream, you could also have Salsa and/or Grated cheese, it’s your choice!

Always make sure to drag out the best crockery to serve the Sour Cream!

Now it’s time for everyone to make tacos!

You will have plenty of tasty liquid left over in the pot.

Strain it out and freeze for using in your next batch of Tacos or to make crazy good BBQ Sauce!
