Smoking for Flavour
Now that we are no longer Smoking foods to preserve them, there has been a lot more interest in smoking for flavour.
More often, smoking for flavour is a short process, achieved as part of the cooking or deliberately done to nuance a food.
It’s easy enough to do in the cooking process, particularly if we are using a BBQ.
A Smoke Tube is an easy way to incorporate Smoke Flavour. A tube is filled with wood chips or pellets and lit on one end so it smoulders.
For a Gas BBQ a Smoke tray will work well, the tray is filled with pellets or woodchips, this is placed on the burners where the heat smoulders the wood creating a stream of smoke.
Of course, smoking can be as simple as throwing a handful of herbs or sawdust straight onto the coals.
